You will need

A pot with boiling water for blanching

An air fryer

A ramekin for sauce

A serving platter
Ingredients

1 head of cauliflower

1 package taco seasoning minus 1 tbsp for the sauce

2 tbsp vegetable oil
-
Cilantro for garnish

1 cup mayonnaise

Juice from 2 limes
-
1 tbsp taco seasoning (from before)

Directions

Start by cutting the cauliflower off the core, I cut the head in half, cut out the core from there and split apart the bigger pieces

Place pieces in boiling water for about 3-5 minutes to blanche off.

Strain cauliflower and rinse with cold water to stop cooking

Place cauliflower in a bowl with 2 tbsp oil and the rest of the taco seasoning

Toss well and air fry at 425 degrees for 15 minutes

Garnish cauliflower with chopped cilantro
For the sauce

Mix 1 cup of mayonnaise, 1 tbsp seasoning, and juice from 2 limes until well incorporated

Serve cauliflower immediately with sauce on the side to dip.
