Equipment:  Serving Tray or Platter & ramekin



You will need

  • A pot with boiling water for blanching 
  • An air fryer 
  • A ramekin for sauce 
  • A serving platter

Ingredients

  • 1 head of cauliflower 
  • 1 package taco seasoning minus 1 tbsp for the sauce 
  • 2 tbsp vegetable oil 
  • Cilantro for garnish 
  • 1 cup mayonnaise 
  • Juice from 2 limes 
  • 1 tbsp taco seasoning (from before) 

Directions

  1. Start by cutting the cauliflower off the core, I cut the head in half, cut out the core from there and split apart the bigger pieces 
  2. Place pieces in boiling water for about 3-5 minutes to blanche off. 
  3. Strain cauliflower and rinse with cold water to stop cooking 
  4. Place cauliflower in a bowl with 2 tbsp oil and the rest of the taco seasoning
  5. Toss well and air fry at 425 degrees for 15 minutes 
  6. Garnish cauliflower with chopped cilantro

For the sauce

  1. Mix 1 cup of mayonnaise, 1 tbsp seasoning, and juice from 2 limes until well incorporated 
  2. Serve cauliflower immediately with sauce on the side to dip.
