You will need
- A pot with boiling water for blanching
- An air fryer
- A ramekin for sauce

Ingredients
- 1 head of cauliflower
- 1 package taco seasoning minus 1 tbsp for the sauce
- 2 tbsp vegetable oil
- Cilantro for garnish
- 1 cup mayonnaise
- Juice from 2 limes
- 1 tbsp taco seasoning (from before)
Directions
- Start by cutting the cauliflower off the core, I cut the head in half, cut out the core from there and split apart the bigger pieces
- Place pieces in boiling water for about 3-5 minutes to blanche off.
- Strain cauliflower and rinse with cold water to stop cooking

Place cauliflower in a bowl with 2 tbsp oil and the rest of the taco seasoning
- Toss well and air fry at 425 degrees for 15 minutes
- Garnish cauliflower with chopped cilantro
For the sauce
- Mix 1 cup of mayonnaise, 1 tbsp seasoning, and juice from 2 limes until well incorporated
- Serve cauliflower immediately with sauce on the side to dip.
