Buttermilk Pancake Cupcakes with Maple Frosting

INGREDIENTS

  • 2 cups Buttermilk pancake mix 
  • 1-1/4 cup Water 
  • 2 sticks unsalted butter, at room temperature 
  • 1/3 cup Pure maple syrup 
  • 1 tsp maple extract 
  • 3 cups Powdered sugar 
  • 4 crispy bacon strips, crumbled (for garnish) 

DIRECTIONS

  1. Preheat your oven to 350 degrees.
  2. In a medium bowl, mix pancake mix and water.
  3. Scoop into a lined cupcake pan, about 2 Tbsp each. 
  4. Bake for 10-12 minutes.
  5. While the cupcakes are baking, add butter, maple syrup & extract into a large bowl. 
  6. Beat for approx. 2 minutes with a stand or hand mixer until combined. Slowly add powdered sugar until the mixture is creamy. 
  7. Cool completely then frost cupcakes with maple buttercream using an icing spatula or piping bag. 
  8. Sprinkle tops with chopped bacon & enjoy!
