Ingredients

Ribs

  • 1 Tbsp brown sugar 
  • 1 Tbsp smoked paprika 
  • 1 tsp garlic powder 
  • 1/2 tsp salt 
  • 1/2 tsp pepper 
  • 3 ears of corn, shucked 
  • 2 Tbsp olive oil 

Rib Sauce

  • 1/3 cup BBQ sauce 
  • 1/3 cup mayonnaise 
  • 2 Tbsp brown mustard 
  • 1 Tbsp honey

Garnish

  • 2 green onions, sliced

  • 1/2 cup store bought fried onions 

Directions

  1. Preheat oven to 425 degrees 
  2. Combine first 5 ingredients in a small bowl to make the spice mix. Set aside.
  3. For the ribs, use a sharp knife to cut each ear of corn in half in the middle. Cut each half into four pieces. It works best if you stand the corn up. (Be careful, corn will be hard to cut.) 
  4. Brush the corn pieces with olive oil. Over a plate, season with the spice mix. 
  5. Transfer corn onto sheet pan lined with foil or silicone baking mat. 
  6. Bake the corn for about 18 minutes or until corn is a bit charred and slices start to curl. 
  7. While the corn ribs are in the oven, make the sauce. Set it aside.  
  8. Spoon sauce over each rib as you serve. Enjoy!
