INGREDIENTS

  • ½ Tbsp softened butter
  • 1 cup all-purpose flour
  • ½ tsp vanilla
  • 1 tsp baking powder
  • ½ tsp salt
  • 6 tsp butter, melted
  • 2 large eggs
  • ¾ cup light brown sugar
  • ½ tsp vanilla extract
  • 3 large apples, peeled and sliced
  • 1 cup dried cranberries (optional)

DIRECTIONS

  1. Butter the bottom of an 8" or 9" springform pan. Cut a parchment round and place in the bottom of the pan. Coat the parchment and sides of the pan with butter and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, whisk together the melted butter, eggs, sugar, and vanilla until creamy. Whisk in the flour until just combined.
  4. With a rubber spatula, fold the apples into the batter until evenly coated.
  5. Bake until lightly brown and a toothpick inserted into the center comes out clean.

Tara’s Tidbits®: When the cake is cool, release it from the pan and dust it lightly with powdered sugar. Serve with whipped cream or ice cream.
