INGREDIENTS
- ½ Tbsp softened butter
- 1 cup all-purpose flour
- ½ tsp vanilla
- 1 tsp baking powder
- ½ tsp salt
- 6 tsp butter, melted
- 2 large eggs
- ¾ cup light brown sugar
- ½ tsp vanilla extract
- 3 large apples, peeled and sliced
- 1 cup dried cranberries (optional)
DIRECTIONS
- Butter the bottom of an 8" or 9" springform pan. Cut a parchment round and place in the bottom of the pan. Coat the parchment and sides of the pan with butter and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, whisk together the melted butter, eggs, sugar, and vanilla until creamy. Whisk in the flour until just combined.
- With a rubber spatula, fold the apples into the batter until evenly coated.
- Bake until lightly brown and a toothpick inserted into the center comes out clean.
Tara’s Tidbits®: When the cake is cool, release it from the pan and dust it lightly with powdered sugar. Serve with whipped cream or ice cream.
