Ingredients

  • 4 pounds russet potatoes, peeled and cut into 1/4 inch pieces (just as long as the pieces are roughly the same size that’s fine, its getting mashed up in the end) 
  • 6 Tbsp butter- cut into pieces. 
  • 2 cups half and half 
  • Salt and pepper 
  • 1  7-8oz block of feta cheese 
  • 1/2 cup sour cream 
  • 1 Tbsp chopped scallions 

Directions

  1. Preheat your oven to 400 degrees 
  2. Start by peeling your potatoes and cutting into uniform chunks 
  3. Place potatoes into a 13x9 baker and pour the half and half over the potatoes. 
  4. Sprinkle some salt and pepper over the potatoes 
  5. Place the block of feta cheese in the middle of the baker, on top of the potatoes.  
  6. place the butter around the feta cheese 
  7. cover the baker and bake at 400 for about an hour and a half. 
  8. Take the potatoes out of the oven and mash directly in the hot baker. 
  9. Add the sour cream and mix well 
  10. Re- cover the baker with aluminum foil and bake at the same temperature for about 10 minutes, until the potatoes are piping hot again. 
  11. Top with the scallions and serve immediately.
