
SIDE DISH
Yield: Approximately 4-6 servings
INGREDIENTS
- 4 pounds russet potatoes, peeled and cut into 1/4 inch pieces (just as long as the pieces are roughly the same size that’s fine, its getting mashed up in the end)
- 6 Tbsp butter, cut into pieces
- 2 cups half and half
- Salt and pepper
- 1, 8oz block of feta cheese
- 1/2 cup sour cream
- 1 Tbsp chopped scallions
DIRECTIONS
- Preheat your oven to 400 degrees.
- Start by peeling your potatoes and cutting into uniform chunks.
- Place potatoes into a 13x9 baker and pour the half and half over the potatoes.
- Sprinkle some salt and pepper over the potatoes.
- Place the block of feta cheese in the middle of the baker, on top of the potatoes.
- Place the butter around the feta cheese, cover the baking dish with aluminum foil, and bake at 400 for about 1.5 hours.
- Take the potatoes out of the oven and mash directly in the hot baker.
- Add the sour cream and mix well
- Recover the baker with foil and bake at the same temperature for about 10 minutes, until the potatoes are piping hot again.
- Top with the scallions and serve immediately.
