French Apple Cake

INGREDIENTS
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 stick unsalted butter
- ⅔ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 Tbsp rum
- 2 honey crisp or Granny Smith apples, peeled, cored, and cut into ½-inch cubes
- nonstick cooking spray
- 1 Tbsp granulated sugar, for topping
- confectioners’ sugar, for decoration
Directions
- Set oven rack in middle position. Grease a 9-inch springform regular cake pan with butter or nonstick cooking spray. (Note: If using a regular pan, line bottom with parchment paper and grease again.).
- In a small bowl, mix flour, baking powder, and salt. Set aside.
- In a medium bowl, with an electric mixer, cream butter and ⅔ cup sugar until light and fluffy, about 3 minutes. Add eggs one at a time, beating well and scraping bowl after each addition. Beat in vanilla and rum. Add flour mixture and beat on low speed until just combined. Using a rubber spatula, fold in chopped apples.
- Scrape batter into prepared pan, even the top, and sprinkle with 1 tablespoon of sugar. Bake in a preheated 350°F oven for 40 minutes or until cake is golden and a toothpick inserted into the center comes out clean. Cool on a rack.
- Run a knife around the edges of the cake. Remove the sides of the springform pan. If using a regular cake pan, carefully invert cake and peel off parchment paper.
- Dust cooled cake with confectioners’ sugar for serving.
