Grilled Salmon with Lemon Garlic Sauce

INGREDIENTS

for the salmon

  • 4 salmon fillets
  • 2 heads romaine lettuce
  • ¼ cup olive oil
  • Salt & pepper, to taste

for the sauce

  • ¼ cup olive oil
  • 2 Tbsp lemon juice
  • 1 tsp mustard
  • 2 cloves garlic, minced
  • Salt & pepper, to taste

DIRECTIONS

  1. Preheat grille to medium-high heat.
  2. Pat salmon dry with a paper towel and season with salt & pepper to taste. Brush generously with olive oil.
  3. Cut romaine heads in half lengthwise and brush both sides with olive oil.
  4. Mix all sauce ingredients together and set aside.
  5. Grill salmon 5-7 minutes per side, depending on thickness. Set aside.
  6. Grill romaine cut side down until charred, about 3 minutes. Then flip and grill other side for 1 minute.
  7. Serve salmon and romaine drizzled with prepared sauce.
