INGREDIENTS
for the cake
- 1 cup sugar
- 1 cup canola oil
- 1 cup honey
- 3 large eggs (at room temperature)
- ½ cup orange juice
- 1 Tbsp vanilla
- 3-1/2 cups All Purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup fresh blueberries
- 1 cup fresh raspberries
for the glaze
- 1 cup confectioners’ sugar
- 2 Tbsp honey
- 2 Tbsp milk
DIRECTIONS
- Grease a 9 x 13 baking pan. Set aside.
- In a large bowl beat sugar, oil, honey, eggs, orange juice and vanilla until well blended. In another bowl whisk together the flour, baking powder, baking soda and salt.
- Gradually beat dry ingredients into the wet ingredients just until combined. Do not overbeat.
- Transfer to prepared pan and bake for 15 minutes.
- Arrange the berries in a flag pattern with blueberries in the upper left corner and the raspberries in rows like an American flag.
- Continue baking an additional 30 minutes until a toothpick inserted in the center comes out clean. Cool over a wire rack until completely cooled.
- Make the glaze and drizzle it over cake. Serve with additional berries and/or whipped cream.
