Mandarin Orange Chicken

INGREDIENTS

 

Chicken

  • ¼ cup flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 clove, minced
  • 4-6 boneless, skinless chicken thighs
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 1 can mandarin orange slices, drained, syrup reserved
  • 2-3 scallions, sliced
  • ¼ cup cashews (optional)

 

Sauce

  • reserved mandarin orange syrup
  • 3 Tbsp honey
  • 1 small lemon, juiced
  • 2 Tbsp reduced sodium soy sauce
  • 1 clove garlic, minced
  • 1 tsp ginger

  

Directions

 

  1. Mix flour, salt, pepper, and clove together. Dredge chicken with seasoned flour.
  2. Melt butter and oil in a large sauté pan over medium heat. Brown chicken on both sides, then reduce heat to simmer.
  3. Stir all Sauce ingredients together. Pour sauce over chicken, cover, and simmer for 15-20 minutes, turning often, until cooked through.
  4. Stir in orange slices and top with scallions and cashews.
  5. Serve over rice.
