Mandarin Orange Chicken

INGREDIENTS
Chicken
- ¼ cup flour
- 1 tsp salt
- ½ tsp black pepper
- 1 clove, minced
- 4-6 boneless, skinless chicken thighs
- 2 Tbsp olive oil
- 2 Tbsp butter
- 1 can mandarin orange slices, drained, syrup reserved
- 2-3 scallions, sliced
- ¼ cup cashews (optional)
Sauce
- reserved mandarin orange syrup
- 3 Tbsp honey
- 1 small lemon, juiced
- 2 Tbsp reduced sodium soy sauce
- 1 clove garlic, minced
- 1 tsp ginger
Directions
- Mix flour, salt, pepper, and clove together. Dredge chicken with seasoned flour.
- Melt butter and oil in a large sauté pan over medium heat. Brown chicken on both sides, then reduce heat to simmer.
- Stir all Sauce ingredients together. Pour sauce over chicken, cover, and simmer for 15-20 minutes, turning often, until cooked through.
- Stir in orange slices and top with scallions and cashews.
- Serve over rice.
