INGREDIENTS

for the cupcakes:

  • 1 box yellow cake mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup water
  • 4 tablespoons tequila
  • 1 grapefruit zested and juiced
  • 1 lime zested and juiced
  • 1 Tbsp tequila (to brush cupcakes after baking)

for the icing:

  • 1 cup (2 sticks) butter at room temperature
  • 3 cups powdered sugar
  • 1 tablespoon lime juice (approx. 1 lime)
  • 1 tablespoon grapefruit juice
  • 1 tablespoon tequila
  • pinch of coarse salt

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Line cupcake pans with liner cups (24 total).
  3. In a large bowl, combine eggs, oil, water, citrus zests, citrus juices and tequila until smooth.
  4. Add box of cake mix, beat well.
  5. Spoon batter into cupcake pans, about halfway up each one.
  6. Bake in the oven for about 17-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from oven and let cool completely. Use cooling racks if you have them.
  8. Once cooled, brush tops of cupcakes with tequila.
  9. In the bowl of a stand mixer, whip the butter on high speed about 5 minutes, or until fluffy.
  10. Slowly add the powdered sugar to butter, mix until combined.
  11. When just combined, add the citrus juices, tequila and salt.
  12. Spread icing onto each cupcake.
