Pasta with Sausage & Peas

Yield: 4 servings

INGREDIENTS

  • 1 lb. pasta
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 lb. Italian sausage, bulk (if links, remove from casings)
  • 12 ounces frozen peas
  • ½ cup heavy cream
  • 4 Tbsp butter
  • ¼ cup grated parmesan cheese  

DIRECTIONS

  1. Prepare pasta according to package directions, retaining ½ cup pasta water.
  2. Over medium heat, sauté garlic in olive oil in medium pan.
  3. Brown sausage in pan, then add peas and simmer for 5 minutes.
  4. Slowly add butter and cream.
  5. Bring to a gentle simmer, add pasta water, and cook for 5 more minutes.
  6. Toss with pasta, then add parmesan.
