INGREDIENTS
for the filling
- 6 ripe peaches, peeled and sliced
- 1-1/2 cups fresh blueberries
- ¾ cup granulated sugar
- 2-1/2 Tbsp cornstarch
for the crust
- 1 cup all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 2 large egg yolks
- 2 large egg whites, stiffly beaten
- ¼ cup butter, melted
DIRECTIONS
- Combine peaches, blueberries, cornstarch and sugar. Pour into a 13 x 9 Temp-tations baker.
- In a large bowl whisk together the flour, sugar and baking powder. Stir in egg yolks and melted butter.
- Fold in the egg whites.
- Spread mixture over the peaches.
- Bake at 375 degrees until golden (about 45 minutes)
- Cool and serve with whipped topping or ice cream.
