Peach Blueberry Cobbler

INGREDIENTS

for the filling

  • 6  ripe peaches, peeled and sliced
  • 1-1/2 cups fresh blueberries
  • ¾ cup granulated sugar
  • 2-1/2 Tbsp cornstarch

for the crust

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 2 large egg yolks
  • 2 large egg whites, stiffly beaten
  • ¼ cup butter, melted

DIRECTIONS

  1. Combine peaches, blueberries, cornstarch and sugar. Pour into a 13 x 9 Temp-tations baker.
  2. In a large bowl whisk together the flour, sugar and baking powder. Stir in egg yolks and melted butter.
  3. Fold in the egg whites.
  4. Spread mixture over the peaches.
  5. Bake at 375 degrees until golden (about 45 minutes)
  6. Cool and serve with whipped topping or ice cream.
