INGREDIENTS
For the cake
- 1 Yellow Cake Mix
- 4 Large eggs
- ½ cup vegetable oil
- 8 oz crushed pineapple
For the frosting
- 3 cups heavy cream
- One box instant vanilla pudding
- 8 oz crushed pineapple
DIRECTIONS
For the cake
- Spray the bottom of a 13 x 9 pan with cooking spray.
- In a large bowl whisk eggs with pineapple juice and oil. Whisk in the cake mix and pineapple until well combined
- Pour the batter into the prepared pan, smooth top and bake 25 – 30 minutes until a toothpick inserted into the center comes out clean.
- Cool cake for at least one hour. Do not make frosting ahead of time. The vanilla pudding will make the frosting stiffen.
For the frosting
- In a large bowl beat the cream until it begins to thicken. Beat in the vanilla pudding until it reaches the desired consistency. Fold in the pineapple.(hold back ¼ cup for topping).
- Smooth evenly over the cake. Top with remaining pineapple.
- Slice and serve.
