Sautéed Shrimp & Mushrooms

INGREDIENTS

  • 4 cloves garlic, minced
  • 2 tsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 3 cups sliced mushrooms
  • ¼ cup chicken broth
  • 1-1/4 cups sliced green onions
  • Thinly sliced lemon
  • 1 Tbsp fresh thyme

DIRECTIONS 

  1. In a large skillet, sauté garlic in oil for 1 minute. Add the shrimp, mushrooms and 1 cup onions. Stir fry for one 1 minute. 
  2. Stir in the broth, cook 2 minutes longer or until the shrimp turn pink.
  3. Serve with rice, garnished with remaining green onions, and lemon slices.
