INGREDIENTS
- 4 cloves garlic, minced
- 2 tsp olive oil
- 1 lb shrimp, peeled and deveined
- 3 cups sliced mushrooms
- ¼ cup chicken broth
- 1-1/4 cups sliced green onions
- Thinly sliced lemon
- 1 Tbsp fresh thyme
DIRECTIONS
- In a large skillet, sauté garlic in oil for 1 minute. Add the shrimp, mushrooms and 1 cup onions. Stir fry for one 1 minute.
- Stir in the broth, cook 2 minutes longer or until the shrimp turn pink.
- Serve with rice, garnished with remaining green onions, and lemon slices.
