French Onion Soup for One

Yield: 1 serving

INGREDIENTS

  • 2 Tbsp butter
  • 1 large sweet onion
  • 1 small clove garlic
  • 1 bay leaf
  • 1 sprig of fresh thyme
  • salt and pepper, to taste
  • ¼ cup sherry wine
  • 3 Tbsp flour
  • 16 ounces beef broth
  • 4 slices swiss cheese
  • 8 croutons

DIRECTIONS

  1. Melt butter in a medium pot over medium heat. Add onions, garlic, bay leaf, thyme, salt, and pepper and cook until onions are very soft and caramelized, about 25 minutes.
  2. Add wine, bring to a boil, reduce heat, and simmer until wine has evaporated and onions are dry, about 5 minutes.
  3. Mix flour into onions and cook for about 4 minutes. Remove bay leaf and thyme sprig, then add beef broth. Bring soup back to a simmer and cook for 10 minutes. Season to taste with salt and pepper.
  4. To serve, heat cold soup to a boil in medium sauce pot. Once hot, ladle soup in a temp-tations® seal the meal mug. Float croutons on top of soup. Arrange swiss cheese on top of croutons to cover. Broil or bake in a preheated 350°F oven until cheese is melted and slightly browned.
