INGREDIENTS

for the cupcakes

  • 1 box vanilla or yellow butter cake mix
  • Water, vegetable oil, and eggs according to cake mix directions
  • 1 can vanilla frosting

for the chocolate & peanut butter nests

  • 1, 12-ounce bag Chow Mein noodles
  • 1, 12-ounce bag semi-sweet chocolate chips
  • 1, 12-ounce bag peanut butter chips
  • 36 mini Easter eggs candies or jellybeans

for the coconut nests

  • 1, 14-ounce bag flaked coconut
  • Food coloring (your choice of spring colors)
  • 36 mini Easter eggs candies or jellybeans

DIRECTIONS

  1. Place paper cupcake liners in two Temp-tations 6-cup muffin pans.
  2. Make cupcakes according to package directions and cook in a preheated 350°F oven for 15-18 minutes, or according to package directions. This will make two batches, or 24 cupcakes. Top each cupcake with frosting.
  3. To make chocolate & peanut butter nests, measure out equal parts Chow Mein noodles to chocolate/peanut butter chips. Melt chips in a temp-tations® bowl in the microwave in 30 second intervals, stir till smooth, and add Chow Mein noodles. Mix to combine. Drop small mounds of mixture on a parchment-lined cookie sheet or temp-tations platter, gently press 3 mini candy eggs into center of each, and let harden (or refrigerate). Gently press hardened nests onto frosted cupcakes.
  4. To make coconut nests, add 1 cup flaked coconut to a small Ziploc bag. Add 1-2 drops of your choice of food coloring, close bag, and gently toss coconut mixture until desired color is reached (repeat process with more coconut, different food coloring options, and Ziploc bags to create more colors). Gently mound coconut on top of frosted cupcakes and add 3 mini candy eggs in the middle of each.

Tara’s Tidbits®: These cupcakes look so cute served on a Easter or spring-themed Temp-tations serving platter. And with two different flavors of birds’ nests, guests get to choose their favorite!
