Cider Glazed Chicken with Apples

INGREDIENTS

 

  • 1 cut-up chicken (or 4 chicken breasts or 6 chicken thighs)
  • ⅓ cup all-purpose flour
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp fresh ground pepper
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 2 shallots, thinly sliced
  • 3 apples, sliced (honey crisp, fuji, or Granny Smith)
  • 3 sprigs fresh thyme
  • 1 cup apple cider
  • ¾ cup chicken stock
  • 1 tsp soy sauce
  • ½ tsp dry mustard powder
  • fresh thyme leaves

 

Directions

 

  1. Season flour with thyme, salt, and pepper. Transfer flour to a bowl or bag.  Add chicken and shake to coat.
  2. Heat a large skillet over medium-high heat, add butter and olive oil, and brown chicken on both sides until well-browned. Remove chicken to a platter and set aside.
  3. Add shallots to pan and sauté for 1 minute. Add apples and thyme sprigs and sauté for a few more minutes. Deglaze pan with apple cider and scrape up any bits on the bottom of the pan. Bring mixture to a simmer. Whisk chicken stock, soy sauce, and mustard powder together then add to pan. Return chicken to pan, arranging it alongside apples. Reduce heat and simmer uncovered for 25-30 minutes until sauce thickens to a glaze and chicken is cooked through (it should register 165°F). 
  4. Turn chicken over in sauce to coat and transfer to a serving platter. Season sauce with additional salt and pepper if needed. Arrange chicken and apples on a platter, drizzle with sauce, and garnish with additional thyme.
