Cider Glazed Chicken with Apples

INGREDIENTS
- 1 cut-up chicken (or 4 chicken breasts or 6 chicken thighs)
- ⅓ cup all-purpose flour
- ½ tsp dried thyme
- ½ tsp salt
- ¼ tsp fresh ground pepper
- 1 Tbsp olive oil
- 1 Tbsp butter
- 2 shallots, thinly sliced
- 3 apples, sliced (honey crisp, fuji, or Granny Smith)
- 3 sprigs fresh thyme
- 1 cup apple cider
- ¾ cup chicken stock
- 1 tsp soy sauce
- ½ tsp dry mustard powder
- fresh thyme leaves
Directions
- Season flour with thyme, salt, and pepper. Transfer flour to a bowl or bag. Add chicken and shake to coat.
- Heat a large skillet over medium-high heat, add butter and olive oil, and brown chicken on both sides until well-browned. Remove chicken to a platter and set aside.
- Add shallots to pan and sauté for 1 minute. Add apples and thyme sprigs and sauté for a few more minutes. Deglaze pan with apple cider and scrape up any bits on the bottom of the pan. Bring mixture to a simmer. Whisk chicken stock, soy sauce, and mustard powder together then add to pan. Return chicken to pan, arranging it alongside apples. Reduce heat and simmer uncovered for 25-30 minutes until sauce thickens to a glaze and chicken is cooked through (it should register 165°F).
- Turn chicken over in sauce to coat and transfer to a serving platter. Season sauce with additional salt and pepper if needed. Arrange chicken and apples on a platter, drizzle with sauce, and garnish with additional thyme.
