SALAD
Yield: 6-8 servings
INGREDIENTS
for the rice bowl salad
- 4 cups Forbidden (black rice), cooked according to package directions
- 2 cups diced cooked chicken
- 2 cups shredded red cabbage
- 2 cups diced cucumbers
- 2 mangos, sliced
- 2 avocados, sliced
for the peanut sauce
- 1 cup creamy peanut butter
- 2 Tbs brown sugar
- 2 cloves garlic, grated
- 1 tsp fresh ginger, grated
- 1 lime juiced
- 2 Tbs soy sauce
- ½ cup vegetable oil
DIRECTIONS
for the rice bowl salad
- Place the cooked rice in a large salad bowl
- Add the cooked chicken
- Arrange the cabbage, cucumbers and mango around the Rice and Chicken
- Top with avocado
for the peanut sauce
- In a small bowl, combine all ingredients, then whisk to blend
- Drizzle sauce over rice bowl ingredients, to taste
Tara’s Tidbits®: I had this marvelous salad in a restaurant. I tweaked it a bit, and now it’s become a regular treat in my house. Don’t let the Black Rice scare you – it is a short grain rice with a mild flavor. We were able to purchase it at a local major chain store, but is also available online.
