Temp-tations recipe: Forbidden Rice Bowl

SALAD

Yield: 6-8 servings

INGREDIENTS

for the rice bowl salad

  • 4  cups Forbidden (black rice), cooked according to package directions
  • 2 cups diced cooked chicken
  • 2 cups shredded red cabbage
  • 2 cups diced cucumbers
  • 2 mangos, sliced
  • 2 avocados, sliced

for the peanut sauce

  • 1 cup creamy peanut butter
  • 2 Tbs brown sugar
  • 2 cloves garlic, grated
  • 1 tsp fresh ginger, grated
  • 1 lime juiced
  • 2 Tbs soy sauce
  • ½ cup vegetable oil

DIRECTIONS

for the rice bowl salad

  1. Place the cooked rice in a large salad bowl
  2. Add the cooked chicken
  3. Arrange the cabbage, cucumbers and mango around the Rice and Chicken
  4. Top with avocado

for the peanut sauce

  1. In a small bowl, combine all ingredients, then whisk to blend
  2. Drizzle sauce over rice bowl ingredients, to taste

Tara’s Tidbits®: I had this marvelous salad in a restaurant. I tweaked it a bit, and now it’s become a regular treat in my house.  Don’t let the Black Rice scare you – it is a short grain rice with a mild flavor.  We were able to purchase it at a local major chain store, but is also available online.
