Ingredients

  • 4  cups Forbidden (black rice), cooked according to package directions

  • 2 cups diced cooked chicken

  • 2 cups shredded red cabbage

  • 2 cups diced cucumbers

  • 2 mangos, sliced

  • 2 avocados, sliced

      Directions

      • Place the cooked rice in a large salad bowl
      • Add the cooked chicken
      • Arrange the cabbage, cucumbers and mango around the Rice and Chicken
      • Top with avocado
      • Add peanut sauce to taste
      Peanut Sauce:
      In a small bowl, combine the following, then whisk to blend
      • 1 cup creamy peanut butter
      • 2 Tbs brown sugar
      • 2 cloves garlic, grated
      • 1 tsp fresh ginger, grated
      • 1 lime juiced
      • 2 Tbs soy sauce
      • ½ cup vegetable oil

      Yield: Approximately 6-8 servings

      I had this marvelous salad in a restaurant. I tweaked it a bit, and now it’s become a regular treat in my house.  Don’t let the Black Rice scare you – it is a short grain rice with a mild flavor.  We were able to purchase it at at a local major chain store, but is also available online.
