Ingredients
- 1 seedless cucumber, halved lengthwise and seeded with a spoon
- 1 yellow & 1 red bell pepper, diced large
- 1 pint cherry or grape tomatoes, cut in half
- 1/2 red onion, cut in half rounds
- 1/2 lb. feta cheese, diced into ½ inch squares (not crumbled)
- 1/2 cup calamata olives
For the vinaigrette:

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp Dijon mustard

1/4 cup red wine vinegar

1 tsp salt

1/2 tsp pepper

1/2 cup olive oil

Directions

In the large mixing bowl, add all the chopped and sliced vegetables.

Add in cubed feta and calamata olives.
- In a medium size mixing bowl, combine all the dressing ingredients except the olive oil.

While you whisk the dressing ingredients, slowly drizzle in the oil to emulsify the dressing.

Pour vinaigrette over the vegetables, toss and let sit in the refrigerator for 30 minutes before serving.
