Grilled Mexican Street Corn

INGREDIENTS

 

  • 6 – 8 medium ears sweet corn, husks & silk removed
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup minced fresh or 1 tablespoon dried cilantro
  • 1 clove minced garlic
  • 1/4 – 1/2 tsp ground chipotle pepper
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • ½ cup grated parmesan cheese

 

Directions

 

  1. Heat grill to 400F
  2. Whisk together the sour cream, mayo , cilantro, garlic, chipotle pepper, lime zest & juice.
  3. Grill the corn, turning ears until golden brown on all sides.
  4. With a brush or spoon coat each ear with sauce. Sprinkle with grated parm. 
  5. Serve with extra lime wedges if desired.
