Grilled Mexican Street Corn

INGREDIENTS
- 6 – 8 medium ears sweet corn, husks & silk removed
- ½ cup sour cream
- ½ cup mayonnaise
- ½ cup minced fresh or 1 tablespoon dried cilantro
- 1 clove minced garlic
- 1/4 – 1/2 tsp ground chipotle pepper
- 2 teaspoons lime zest
- 2 tablespoons lime juice
- ½ cup grated parmesan cheese
Directions
- Heat grill to 400F
- Whisk together the sour cream, mayo , cilantro, garlic, chipotle pepper, lime zest & juice.
- Grill the corn, turning ears until golden brown on all sides.
- With a brush or spoon coat each ear with sauce. Sprinkle with grated parm.
- Serve with extra lime wedges if desired.
