Grilled Salmon with Lemon Garlic Sauce

INGREDIENTS
Salmon
- 4 salmon fillets
- 2 heads romaine lettuce
- ¼ cup olive oil
- salt & pepper, to taste
Sauce
- ¼ cup olive oil
- 2 Tbsp lemon juice
- 1 tsp mustard
- 2 cloves garlic, minced
- salt & pepper, to taste
Directions
- Preheat grille to medium-high heat.
- Pat salmon dry with a paper towel and season with salt & pepper to taste. Brush generously with olive oil.
- Cut romaine heads in half lengthwise and brush both sides with olive oil.
- Mix all sauce ingredients together and set aside.
- Grill salmon 5-7 minutes per side, depending on thickness. Set aside.
- Grill romaine cut side down until charred, about 3 minutes. Then flip and grill other side for 1 minute.
- Serve salmon and romaine drizzled with prepared sauce.
