INGREDIENTS
- ¼ cup butter, softened
- 4 ounces cream cheese
- 1 tsp vanilla extract
- 4 cups confectioners’ sugar
- 2 ½ cups flaked coconut
- 1 Tbsp cinnamon
DIRECTIONS
- In medium bowl, beat butter and cream cheese together until smooth. Add the vanilla and confectioners sugar; beat until smooth. Mix in the coconut.
- Roll into balls or potato shapes, then roll in cinnamon.
- Place on cookie sheet and chill for a minimum of 1 hour.
