Ingredients
- 1 box lemon cake mix, prepared according to directions, then cooled completely

1 3oz box of lemon Jell-o (or other lemon gelatin)

1 cup boiling water
- 1 box vanilla instant pudding
- 1 cup milk
- 1 tub frozen whipped topping, defrosted
- optional: fresh lemon slices for garnish

Directions
- Bake the lemon cake according to the package instructions and allow it to cool completely.
- Using a chopstick or narrow wooden spoon handle, poke holes in rows about 1 inch apart over entire cake.
- In a small bowl, mix lemon Jell-o and boiling water, stirring until completely dissolved.

Pour Jell-o slowly into the holes.
- Cool cake in refrigerator for about an hour.
- In a medium bowl, whisk the vanilla pudding mix and the milk until it thickens.
- Fold the whipped topping into the pudding mixture.
- Frost the cake with the pudding mixture, then cool in the fridge for an hour or two.
- (optional) Garnish with fresh lemon slices
