Luscious Lemon Loaf Cake


Lemon Loaf Cake Recipe

Yield: 1 loaf cake

INGREDIENTS

  • 1 box lemon cake mix, prepared according to directions, then cooled completely
  • 1, 3 oz box of lemon gelatin dessert
  • 1 cup boiling water 
  • 1 box vanilla instant pudding
  • 1 cup milk
  • 1 tub frozen whipped topping, defrosted
  • optional: fresh lemon slices for garnish

DIRECTIONS

  1. Bake the lemon cake in a large loaf pan according to the package instructions. Allow it to cool completely.
  2. Using a chopstick or narrow wooden spoon handle, poke holes in rows about 1 inch apart over entire cake.
  3. In a small bowl, mix lemon gelatin dessert and boiling water, stirring until completely dissolved.
  4. Pour Jell-o slowly into the holes. 
  5. Cool cake in refrigerator for about an hour.
  6. In a medium bowl, whisk the vanilla pudding mix and the milk until it thickens.
  7. Fold the whipped topping into the pudding mixture.
  8. Frost the cake with the pudding mixture, then cool in the fridge for an hour or two.
  9. (optional) Garnish with fresh lemon slices
