Mini Pumpkin Spice Bread

INGREDIENTS
- 1 ⅔ cups flour
- 1 ½ cups sugar
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- ¼ tsp nutmeg
- 1 15oz can pureed pumpkin (NOT pumpkin pie filling)
- ½ cup vegetable oil
- 2 large eggs
- ¼ cups water
DIRECTIONS
- Preheat oven to 350 degrees.
- In a large bowl, mix together flour, sugar, baking soda, baking powder, cinnamon, salt, and nutmeg together with a whisk.
- One at a time add in eggs, then add in pumpkin, vegetable oil, and water and continue mixing until all ingredients are incorporated
- Scoop about 1 ½ cups of batter into temp-tations mini loaf pan.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before cutting.
