Mini Pumpkin Spice Bread

INGREDIENTS

  • 1 ⅔ cups flour
  • 1 ½ cups sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¼ tsp nutmeg
  • 1 15oz can pureed pumpkin (NOT pumpkin pie filling)
  • ½ cup vegetable oil
  • 2 large eggs
  • ¼ cups water

 

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together flour, sugar, baking soda, baking powder, cinnamon, salt, and nutmeg together with a whisk.
  3. One at a time add in eggs, then add in pumpkin, vegetable oil, and water and continue mixing until all ingredients are incorporated
  4. Scoop about 1 ½ cups of batter into temp-tations mini loaf pan.
  5. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before cutting.
