Pumpkin Pie Bars

INGREDIENTS

  • 1 box yellow cake mix
  • ½ cup melted butter
  • 3 large eggs
  • ¼ cups sugar
  • 1 tsp cinnamon
  • ¼ cup butter, softened
  • 3 cups pumpkin puree
  • ⅔ cups milk

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Grease two 19-ounce temp-tations® loaf pans (or three 12oz mini loaf pans).
  3. Pour one cup of yellow cake mix into a medium mixing bowl; set aside.
  4. Combine remaining cake mix, ½ cup melted butter, and 1 egg; mix well. Press into bottom of loaf pans for the bottom crust.
  5. In another mixing bowl, combine pumpkin puree, remaining 2 eggs, and milk. Mix until well combined. Dividing evenly, pour over the crust layer in the loaf pans.
  6. Next, add sugar and cinnamon into the mixing bowl containing the 1 cup of yellow cake mix. Cut in butter until the mixture looks crumbly. Sprinkle this mixture over the pumpkin filling in the loaf pans.
  7. Bake in a preheated 350°F oven for 40-45 minutes or until a knife inserted into the bars comes out clean.
