INGREDIENTS
- 2 Tbsp butter
- 1 large sweet onion
- 1 small clove garlic
- 1 bay leaf
- 1 sprig of fresh thyme
- salt and pepper, to taste
- ¼ cup sherry wine
- 3 Tbsp flour
- 16 ounces beef broth
- 4 slices swiss cheese
- 8 croutons
Directions
- Melt butter in a medium pot over medium heat. Add onions, garlic, bay leaf, thyme, salt, and pepper and cook until onions are very soft and caramelized, about 25 minutes.
- Add wine, bring to a boil, reduce heat, and simmer until wine has evaporated and onions are dry, about 5 minutes.
- Mix flour into onions and cook for about 4 minutes. Remove bay leaf and thyme sprig, then add beef broth. Bring soup back to a simmer and cook for 10 minutes. Season to taste with salt and pepper.
- To serve, heat cold soup to a boil in medium sauce pot. Once hot, ladle soup in a temp-tations® seal the meal mug. Float croutons on top of soup. Arrange swiss cheese on top of croutons to cover. Broil or bake in a preheated 350°F oven until cheese is melted and slightly browned.
