Ingredients

    Filling

    • 4 Cups Rhubarb, diced
    • 4 cups Strawberries, sliced
    • 1 cup granulated sugar
    • 1 Tbsp cinnamon
    • 3 Tbsp cornstarch

    Topping

    • 2 cups all-purpose flour
    • 1/2 cup sugar
    • 1/2 tsp baking powder
    • 1/4 tsp salt
    • 8 Tbsp butter, melted
    • 1/2 cup milk
    • 1 large egg
    • 1 tsp vanilla
    • Turbinado sugar

    Directions

    1. In a large bowl mix the fruit, sugar, cinnamon and Cornstarch. Pour into a buttered  9 x 13 “ pan.
    2. Make Topping: Whisk together the flour, sugar, baking power and salt.
    3. Beat together the milk, egg, and vanilla with the cooled melted butter.  Pour into dry ingredients.
    4. Mix batter and spread over the fruit. Sprinkle with Turbinado sugar.
    5. Bake at 350 degrees until the fruit bubbles and the topping is brown.
    6. Serve warm topped with whipped cream or ice cream.
