Tara’s Corn Salad


SALAD

INGREDIENTS

for the salad

  • (1) 8-oz package of mozzarella pearls, drained
  • 2 cups corn (approx. 4 ears)
  • 1 English cucumber, finely chopped
  • ½ red onion, diced
  • 1 orange pepper, diced
  • 2 cups cherry tomatoes, halved
  • Fresh basil to taste (finely chopped / chiffonade)

for the dressing

  • 1 cup olive oil
  • ¼ cup red wine vinegar
  • 1 tsp of Dijon mustard
  • Salt & pepper to taste
  • 2 garlic gloves, minced

EQUIPMENT

  • Large Bowl
  • Salad serving utensils

DIRECTIONS

  • Combine all salad ingredients in a large mixing & serving bowl  and set aside.
  • Reserve some basil to sprinkle on top of finished salad.
  • Combine all dressing ingredients in a jar or container with tight-fitting lid. Shake well (really well).
  • Pour about half the dressing mix over the salad and gently stir to incorporate.
  • Add more of the dressing mix, as desired, and gently stir to incorporate. Serve immediately or chill if making in advance.
