Ingredients

  • 1 sheet (or roll) puff pastry, thawed. 
  • 8 oz leftover turkey 
  • 1.5 cups stuffing 
  • 1 cup mashed potatoes 
  • 1/4 cup cranberry sauce 
  • Beaten egg for egg wash 

Directions

  1. Preheat the oven to 425 degrees 
  2. Start by unwrapping the puff pastry on a silicone mat lined baking sheet 
  3. Either bring your ingredients to room temperature over the course of an hour, or heat slightly to make the stuffing and mash easier to work with. 
  4. You are going to build this roll going up the middle, leave the sides and about an inch on the top and bottom bare. 
  5. Start by spooning the stuffing up the middle, spoon the mashed potatoes on top of the stuffing. 
  6. Top the mashed potatoes with cranberry sauce. 
  7. Layer the turkey slices on top. 

To finish the roll

  1. Using a paring knife, cut the remaining sides of the pastry into 1 inch strips. 
  2. Fold the top and bottom of the pastry over to cover the ends, egg wash before folding the strips down.  
  3. In pairs from the top, cross the right side of the first pastry strip over the top, egg wash, cross the left side of the first pastry strip over the top, egg wash. Repeat these steps until you are out of pastry. 
  4. Make sure the top and sides all have egg wash on them. 
  5. *optional*- sprinkle seasoning of your choice on the pastry. 
  6. Bake in a 425-degree oven for about 25 minutes, or until the pastry is golden brown.  
  7. Let it rest for 5 minutes before transferring to a serving platter. 
  8. Cut slices and enjoy!
